For the 'no~salt' culture of these Amerindians, the sodium content of wood ashes adherent to foods can be a significant addition of this essential mineral to the diet. Contrary to much popular thought, the previously isolated Yanomamo, living among the head waters of the Amazon and Orinoco Rivers, represent only one of numerous groups thriving without salt (sodium chloride). In this intriguing, carefully documented book, William J. Oliver, pediatric researcher, has extended his studies of the physiological adaptation of the Yanomamd to their salt~free state to a review of all cultures reportedly living without salt when first encountered by Westernized intruders. These include Jacques Cartier describing the Amerindians of the St. Lawrence River, Elsdon Best in his writings on the Maori of New Zealand, Margaret McArthur in her food lists of the Aborigines, Albert Schweitzer in his observation on the lack of salt in the interior of Africa, and numerous others. The origin of this successful adaptation to a sodium poor environment extends phylogenetically into the Cretaceous period of some 70 to 90 million years ago. This survival trait embodies the ability to recognize a need for the sodium ion and of it's dietary sources plus avid biological mechanisms for its conservation. To place this unique characteristic in perspective, Dr. Oliver traces it's presence in comparative species sequentially through non~primates and, ultimately, to the primate species including man. Not surprisingly, the sodium sufficient edibles constituting the standard diet of our closest relative, the chimpanzee, are almost identical to the native diet of four representative isolated cultures: the Aborigines of Australia, the Yanomamd of South America, the Bushmen of Africa and the Highlanders of New Guinea. In a lucid discussion, Dr. Oliver clarifies the difference between satisfying salt need and responding to the easily aroused hedonic need free salt appetite. This book provides an important background for those responsible for public policy on nutritional requirements and for physicians prescribing dietary guidelines for individual patients. For general readers, it describes a diverse spectrum of unique lifestyles and survival techniques before Western influence blunted native customs.
